Good peaches are hard to find. Our neighbors brought us some freshly picked South Carolina peaches, so naturally I had to make a pie. I got this recipe from my Grandma, and it is to die for.
6-7 juicy ripe peaches, peeled and sliced
1 pie crust
2/3 cup sugar
4 tablespoons of cornstarch
1 cup of lemon lime soda
1 3 oz box of peach jello mix
CoolWhip (Optional, but for your own good do not skimp on the CoolWhip!)
Bake the pie crust (I use Pillsbury pie crust—it’s a lot easier than making your own.)
Combine sugar, cornstarch and lemon lime soda in a small saucepan and heat, stirring constantly. When the mixture turns stiff and clear remove from heat and stir in the box of peach jello mix.
Arrange the peach slices in the pie crust and pour the jello mixture over top. Place the pie in the refrigerator to cool.
Serve cold with a humongous dollop of CoolWhip or whipped cream.
