Halloween Eyeball Dessert

These are delicious & creepy. The perfect Halloween dessert!

Halloween Eyeball Dessert

Make them if you dare:
1 1/2 cups creamy peanut butter
1/2 cup butter, softened
2 1/2 cups confectioners’ sugar, sifted
1 tablespoon vanilla extract
red food coloring (optional)
12 ounces white chocolate, chopped
2 tablespoons shortening
blue food coloring
1/2 cup semisweet chocolate chips
red food coloring (optional)

1. Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla and enough red food coloring to make the mixture a fleshy red color. Cover and refrigerate for 30 minutes.

2. Roll chilled dough into small, eyeball-sized balls (wear rubber gloves or your hands will be stained red!) and place on a baking sheet lined with wax paper. Refrigerate for another 30 minutes.

3. Melt the white chocolate and shortening in a double boiler. Dip each eyeball into the white chocolate and transfer to the waxed paper. Before the chocolate fully sets use a toothpick and red food coloring to draw veins on the eyeballs. Just use a tiny bit of red or your eyeballs will end up looking silly!

4. Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round iris on the top of the cooled eyeball and press an upside-down chocolate chip in the center for a pupil.

    I made them. But mine don’t look as pretty(?) as yours. I got a bit impatient at the end. But they taste good.

    It definitely took forever to make the eyeballs. I was impatient by the end too. I don’t think I will make them again, but it was a fun one time thing!
