Ariel’s Awesome Apricot Bars

My friend Ariel makes delicious food. When I tried her apricot bars my taste buds had a party in my mouth, so naturally I had to get her recipe. Now I’m sharing it with you! Aren’t you lucky?

apricot bars recipe

1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups oats
1 cup packed brown sugar
1 3/4 sticks butter cut into pieces
1 10–12 oz jar apricot preserves

Preheat your oven to 350 degrees (F) and butter an 8″ x 8″ pan.

In a large bowl combine all the ingredients except the preserves.

Press half of the oat mixture into the bottom of the pan, and spread the apricot preserves on top. Then sprinkle the rest of the oat mixture over the preserves and pat lightly.

Bake for 30–40 minutes or until the bars are lightly browned. Allow them to cool completely before cutting (I didn’t…hence the crumbles!)
