Amaretto & Pecan French Toast

It’s Daniel’s birthday! He isn’t a big dessert person, but he is a big breakfast person. Rather than bake a cake that I would end up eating myself, I made him a nice breakfast of french toast, bacon, and eggs. I tried a new recipe for french toast and it turned out great. I’m usually more of a biscuits-n-gravy girl, but I liked it so much that I ate leftovers for lunch!

3 eggs
3 tablespoons sugar
1 cup milk
1 teaspoon vanilla extract
2 tablespoons amaretto (or 1/2 teaspoon almond extract)
1 loaf french bread cut into 1 inch cubes
1/2 cup pecans
maple syrup

Preheat your oven to 350 degrees F. In a large bowl beat the eggs, sugar, milk, vanilla extract, and amaretto.  Add the bread cubes and let them soak up the mixture for 5 minutes. Pour the bread into a thoroughly greased 9″ x 13″ baking dish and sprinkle the pecans on top. Bake for 20-30 minutes, or until golden brown. Serve with oodles of maple syrup drizzled on top.

    I too, am a breakfast person! So that means, I will be making this Saturday morning. I wonder if I could make variations, maybe adding spiced apples or anything else I’m trying to get rid of, before it goes bad. Either way, it sounds good! Happy Birthday Daniel!
