Healthy No Bake Cookies

Am I the only one whose mom made those delicious “no bake cookies” after school growing up? My mom always called them “oatmeal candy cookies” which I think sounds much more delicious than “no bakes”. Anyway, today I tried Tiffany of The Gracious Pantry’s clean eating recipe for no bake cookies. They are so scrumptious that I’d recommend making a double batch! Here’s the recipe—I made the chocolate peanut butter variation.

Recipe from The Gracious Pantry

1/2 cup agave
2 tsp. vanilla
1/3 cup creamy peanut butter
1/4 cup psyllium husks (you can substitute with wheat germ or oat bran too.)
2 tbsp. chia seeds
1 cup quick-cooking oats
1 tbsp. unsweetened cocoa powder

Combine all ingredients together in a large mixing bowl, using a wooden spoon.

Spoon 20-24 small balls of dough onto a parchment-lined cookie sheet and place the cookie sheet in the freezer for at least 45 minutes.

Remove sheet from freezer and transfer the cookies from the parchment to a Tupperware dish with a good fitting lid. The best way to remove them from the parchment is to get a good grip and twist slightly.

Store in the freezer (if you have any left over to store – don’t say I didn’t warn you!).

      Hilarious! I had a friend whose family called them monkey poop, but I like gorilla poop better. It’s much more specific!

      My friends and I called them Otter Poo cookies. I think I want to try the honey variation; not big on peanutbutter.

    Amazing! The no-bake cookies I’ve made are not healthy, and require mixing things on the stove-top, so I’m eager to try these. Did you use agave or something else? I’m wondering if I can just use honey, and if so, should I use less.

  16. My mom made these when we were kids too. They were my favorite! Who doesn’t like chocolate + peanut butter :) This recipe looks healthier than mom’s version. I’ll have to give it a try!

    My husband always called these ‘crack’. He says they are absolutely addictive. One day in the store, over loud music, I was bragging to my neighbor that I had given him his favorite dessert the night before – my chocolate crack. I got the nastiest looks and comments from other shoppers, and thinking about it, realized why. We will call them Gorilla drops from now on! Thanks for the vegan take and the new name!!

    What is agave for those of us not in the US? They sound like somethng I wouldn’t feel guilty giving to the grandkids and they would like

      Agave is a sweet syrup made from the blue agave plant. Everyone is crazy for it here in the US right now, since it’s a “natural” sweetener, but I did some searching online and it turns out it’s not really any healthier than normal sugar. Oh well! Maybe you could try using honey instead of agave?

    I made these the other day, and they’re pretty good. I used honey to substitute for the agave and maybe used too much (although, I followed the recipe). They turned out very sweet and the honey was overpowering. They are also very sticky and impossible to handle once they’ve been out of the freezer for 10 minutes or more. Next time, I’ll use less honey or agave instead. Thanks for posting this though – happy to have something sweet to make for the vegans in my life.

    These came out great!!! I had to swap a few items because I didn’t have the ingredients called for.. I used ground up graham cracker in place of the psyllium husks and ground flax in place of the chia seeds and otherwise followed as directed. It was amazingly good and SO easy! I pinned on pinterest and shared your site with my facebook friends. Thank you for sharing a great recipe!

    I love this recipe! Even my 12 year old daughter loves them which says alot because she loves the real thing. I changed a couple of things: cut the agave down to 1/3 cup (they were a little too sweet for me), added about 1/3-1/2 cup unsweetened shredded coconut, and omitted the psyillium because I didn’t have any and added additional oatmeal – Fantastic!

    How many calories are these!? They look delicious. Instead of peanut butter I used almond butter, and it still tastes delicious! I will be ending up keeping this recipe for a long time!

    I love that this took 10 minutes to prep! I added a tsp of cinnamon and flax seed instead of chia seed. I also used honey because I only had a bit of agave left. Perfect, and I didn’t feel guilty eating two of them!

  26. I started making these and then realized I didn’t have enough oats. I had about half a cup, so I just added an egg, some wholemeal flour, and then baked them. They turned out quite well :)
