Whole Wheat Mediterranean Flatbread

I’m always looking for quick healthy lunch food recipes. This one takes the cake!

whole wheat pita mediterranean flatbread

whole wheat pita bread
sun-dried tomato pesto
chopped roma tomato
chopped fresh spinach (really pile it on, it wilts in the oven!)
mozzarella (or feta) cheese
grated Parmesan cheese
olive oil
ground black pepper

Preheat the oven to 350 degrees F (175 degrees C). Spread pesto on a pita and place it on a baking sheet. Top with spinach, tomatoes, mozzarella, and Parmesan cheese. Drizzle with olive oil and season with pepper. Bake for 12 minutes or until the pita is crisp. Cut into quarters and enjoy!
