Glazed Lemon “Brownies”

I hope you had a lovely Easter! I was in charge of dessert for our celebration, so I made lemon brownies. They aren’t brown, so they should actually be called lemon “yellowies” but whatever. They were easy to make and tasted like spring. The recipe is below!

If you were a lemon would you rather be juiced to death or zested to death? Personally, I’d rather be juiced to death. Think about it, you’d probably lose consciousness as soon as you were cut in half pre-juicing. If you were zested you’d be in agony much longer as your peel was methodically scraped away. Just something to think about next time you find yourself mutilating lemons for a recipe!

My mint started sprouting out of the ground just in time for a little garnishing action.

brownies
3/4 cup flour
3/4 cup sugar
1/4 teaspoon salt
1 stick butter, softened
2 eggs
1 tablespoon lemon juice
1 teaspoon lemon zest

glaze
1/2 cup powdered sugar
1 tablespoon lemon juice
1 teaspoon lemon zest

Preheat the oven to 350°F and line an 8″ x 8″ baking pan with parchment paper. Stir the flour, sugar, and salt together in a large bowl, and use a mixer to beat in the softened butter. In a separate bowl, whisk the eggs, lemon juice, and zest together. Pour the egg and lemon mixture into the flour mixture and mix well. Dump the batter into the prepared pan and bake for 25-30 minutes (until it’s no longer jiggly). Let the brownies cool. To make the glaze whisk together the powdered sugar, lemon juice, and lemon zest. Drizzle the glaze over the cooled brownies. Let the glaze harden, and cut the brownies into squares. Garnish with fresh mint sprigs if desired. Enjoy!

      So you don’t want to start calling them “yellowies”? ;) Haha! All the “lemon bars” I’ve had have been a bit different from these (the lemon bars I’ve had were very gooey and had a separate crust on the bottom). These lemon brownies are a bit different—they really are the same texture as regular chocolate brownies!

    I love lemon dessert! One of my main Easter traditions is making a lemon dessert for our family get togethers :) My husband loves lemon as much as I do, and his birthday is coming up so I may have to give these a try!

    Definitely called blondies. I love brownies so much. If brownies were a person, I’d marry them. And eat them. Will definitely give this recipe a try. If I were a lemon, I’d want to be zested, so I knew my torture was at least appreciated by those close enough to smell it. Zested lemon is totes the best. But then I’d want to be cut in half and juiced. I would want it all.

    1.) I love lemons. No one ever wants the lemon Jolly Ranchers or candy. I learned as a kid that by liking lemon you always got a few extra pieces. Lol. Wow… I’m such a dork.
    2.) I definitely agree. Being juiced to death would be far better than being zested to death. Ouch! Even the word sounds horrible!
